It depends if you mean the iTunes software or the iTunes music store. Songs bought from the iTunes music store only work on iPods. But iTunes software can also play other kinds of music files (like MP3s), which you can download to other music players.

If you are using Windows 2K/XP, none that I know of. However if you are using Mac OSX there are a number of players that you can use with iTunes with some plugins. Note that these plugins work ONLY with iTunes on OSX.
